Cookies, a la easy

I've told you some about my grandmother and my son, but I haven't told you anything about my mom.

My mom is one busy lady. She works full-time and then comes home to take care of her family, like many working moms these days. My mom also has a sweet tooth, but she doesn't have much time to bake and sometimes candy just doesn't hit the spot. She rarely had time to finish baking all those cookies until one day her friend from work gave her this recipe for bar cookies and wow, they were easy to make. I made them a lot in high school.

Now, most of us know that when baking cookies you mix the batter you bake a batch and then bake another batch until you're out of batter, right? If you don't have time to bake it all right then what do you do?

Well, you could throw it in the fridge, but sometimes it winds up smelling like whatever's in the fridge, good or bad. So, the best solution is just to bake it all then, right? Wrong, the best solution is to find another recipe. That's when mom started baking these tasty treats.

Chocolate Chip Bar Cookies

2 1/4 cups flour

1 cup sugar

1/2 cup brown sugar (packed)

1 teaspoon vanilla

1 teaspoon salt

1 package chocolate chips

1 teaspoon baking soda

2 eggs

1 cup butter/margarine (2 sticks, softened/melted)

1/2 cup nuts (optional)

Preheat oven to 350 degrees. Spray an 11 by 13 cookie sheet. (If you have a jelly roll pan it works better, but the cookie sheet will work fine as long as you don't add the nuts. If you do it will overflow while baking and make a huge mess.) Mix the sugars (yes, both kinds), butter, and vanilla until creamy. Add eggs. Next, mix in the dry ingredients in no more than one cup increments, otherwise you wind up with flour everywhere. (Don't ask me how I know.) Stir in, with a spoon, the chocolate and nuts if you chose to use them.

When everything is mixed together, dump it all into the cookie sheet. Spray your hands with cooking spray and spread the dough out with your hands until it is evenly distributed. Bake for 15-25 minutes. Let them cool for about 5-15 minutes before you cut them.

    Venison steaks over smashed cauliflower

    Start to finish: 30 minutes

    Servings: 4

    2 tablespoons brown sugar

    1 tablespoon paprika

    1 tablespoon chili powder

    1 teaspoon dried thyme

    1 teaspoon dried oregano

    1 teaspoon garlic powder

    Salt and ground black pepper

    1 to 1 1/2 pounds venison loin or tenderloin, cut into 4 steaks

    Two 1-pound packages frozen cauliflower

    2 tablespoons water

    1 cup grated Parmesan cheese

    1/4 cup heavy cream

    Salt and ground black pepper

    In gallon-size zip-close plastic bag, mix the brown sugar, paprika, chili powder, thyme, oregano, garlic powder 1 teaspoon of salt and 1/2 teaspoon black pepper.
